This past weekend I attempted a spinach and feta pizza for the first time on my Grill Dome ceramic kamado. I’ve really been enjoy cooking pizzas on the kamado and have been trying to come up with some fun recipes to try out. What makes this pizza great is that you substitute a typical red sauce for an Alfredo sauce which is incredibly tasty. The other fun thing about making this pizza is that since my wife got her first ever KitchenAid stand mixer for her B-day recently, we went all out with this pizza and made our own pizza dough. It was a lot of fun and we both thought the pizza turned out great. Try this one out and let me know what you think….and as always, the video from start to finish is below. Thanks and enjoy!!!
1/2 block of cream cheese (1/4″ – 1/2″ cubes)
1/3 cup shredded Parmesan
4 Tbsp unsalted butter
3-4 garlic cloves
1 cup milk (I used whole milk)
1/2 tsp black pepper
Melt the butter in a sauce pan over medium heat. Once the butter is nice and melted, toss in the garlic and let the garlic cook for 2-3 minutes. From there toss in the cream cheese and whisk until it becomes nice and creamy. As the cream cheese starts to melt and get nice and creamy, start adding the milk and whisk until smooth. From there, stir in the Parmesan and pepper and whisk a bit more until nice a blended. Remove from heat when sauce reaches desired consistency and set aside until you’re ready to build your pizza.
Spinach & Feta Pizza
Pizza dough (homemade or store bought)
Alfredo sauce (see recipe/instructions above)
1-2 cups of fresh spinach (I just buy the spinach bags from the Publix produce section)
1/4 – 1/2 cup diced red onion
3/4 – 1 cup feta cheese
Italian blend seasoning (I used the Tango Spice Company “Rome is Burning”)
Roll your dough out and coat lightly with some olive oil. Next, spread a generous amount of the Alfredo sauce. From there, add your spinach, feta and red onion, then sprinkle on some of your favorite Italian blend. Once your kamado is cranked up to 500°-550°, toss the pie on the pizza stone and cook for about 6-8 minutes. Serve and enjoy!!
