First off, that may be the longest title ever for a single recipe here on my blog! 🙂 I’ve cooked bacon-wrapped pork tenderloins before and also enjoy slow smoking “Moink Balls“, so I’ve had the idea for a while now to cube up some pork tenderloin and wrap it in bacon and make smoked tenderloin “bites”. Only thing that was holding me up a bit is that I wanted to glaze them with something a bit unique. I searched around for a bit and ended up going with an orange marmalade glaze that has heavy honey notes as well as hints of soy, ginger and garlic. These are similar to Moink Balls (which are beef wrapped in pork…) with the main difference being these are pork wrapped in pork 🙂
This is a fairly straightforward recipe with the only real time consumer being the part where you wrap the pork chunks with bacon. Other than that, just fire your smoker up to about 225° and toss these on for an hour or so, cooking to an internal temp of 140°-145°. As usual pics and video from start to finish below. Orange Marmalade Glaze
1 cup orange marmalade
1/3 cup honey
2 Tbsp soy sauce
2 garlic cloves, finely minced
1/2 tsp salt
1/2 tsp pepper
1/2 tsp ground ginger
Whisk all ingredients together then set aside.
Bacon-Wrapped Pork Tenderloin Bites
1 pork tenderloin, cubed into small, bite sized chunks
1 package of bacon, cut into 3″ strips
BBQ rub of your choice (I used the Simply Marvelous “Sweet Seduction”)
Toss the pork tenderloin chunks in some of the rub. Next, wrap each pork chunk with a strip of bacon and secure with a toothpick (try and make sure the toothpick goes through the bacon on both sides for a more secure lock). Dust the prepped tenderloin bites with some more rub then glaze heavily with the orage marmalade glaze. Save some of the glaze so you can baste the bites one time during your cook.
