Last night I smoked a meatloaf in a cast iron skillet on my Weber kettle. I used a couple small chunks of hickory to give it some smoke flavor and topped it with the super yummy Dimples BBQ Sauce. If you have the time and means to smoke your meatloaf instead of baking it, I highly recommend it. It is so easy to make and so INCREDIBLY good. I’ve got the recipe below with a few pics and then a video at the bottom that walks you through the entire process. Thanks for looking!
1 lb ground beef
1 lb ground pork
1 medium green bell pepper, diced
1 medium sweet onion, diced
1-2 c of your fav BBQ sauce (some people use ketchup, but IMO, BBQ sauce is better…)
1/2 c bread crumbs
1/4 c milk
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp salt
2 tsp hot sauce of your choice (Tabasco or Louisiana work well)
Get your kettle fired up, toss in a chunk or two of your favorite smoke wood (I used hickory and it went really well the meatloaf) and then let the kettle get stabilized at 350°. Go back into the kitchen and mix everything together by hand in a large bowl and form a nice round loaf. Lightly coat your cast iron skillet with olive oil then place the loaf in it. Once your kettle has settled down at 350°, toss the meatloaf on and cook it to an internal temp of about 165°, covering with your BBQ sauce about 15 minutes before it’s done (probably around 145°). Slice and serve.
