Smoked Bacon Wrapped Onion Rings

Recently I noticed some pics of smoked bacon wrapped onion rings blowing up on social media. I can’t say for sure, but I *think* this might be the original recipe. Anyways, I always like to put my own spin on things, so I decided to make these and glaze them up with a homemade sweet and tangy maple BBQ sauce.

This recipe is super simply. Here’s all ya need for the onion rings:

Bacon (3-4 slices per onion ring)
Large white onions
BBQ rub (not necessary…but adds a little more flavor)
Wood skewers (these help hold the bacon in place but also are handy to pick the rings up and move them around…)

Slice the onions into rings that are about 1/2″ thick and 3-4 layers thick. Wrap in bacon, secure with the skewers, then sprinkle a little of your favorite BBQ rub on top and these are ready for your smoker!

I smoked these on my REC TEC “Mini” pellet grill (check out my pellet grill videos here). I would recommend cooking these around 325° – 350°. If you cook these at too low of a temp they will take forever and the bacon will never get nice and crispy…but cook too hot and you can burn the bacon quickly and the onions on the inside won’t be nice and soft yet. Mine cooked for about 60 minutes around 325° then I cranked the temp up to about 375° for the last 30 minutes. During the last 15 minutes, I glazed them with a homemade sweet and tangy maple BBQ sauce. Here’s what you need for that:

Homemade Sweet and Tangy Maple BBQ Sauce Recipe

1 cup ketchup
1/2 cup maple syrup
2 Tbsp molasses
1/4 cup apple cider vinegar

Combine all ingredients into a sauce pan. Bring to a light boil then reduce heat and simmer for 20-30 minutes. Let cool then place in the fridge to thicken up more until it’s time to glaze the onion rings.

I think a fun way to serve these to your guest would be to stack em’ high like I did in the pic below. These were AMAZINGLY good!!! Hope you enjoy them!

    I don’t have a smoker.
    Is it all right just to put them on the grill?
    What temps would you recommend?
    How long to cook?

      Yeah man, definitely. Cook em 275° or so. Can you cook offset on your grill? Like, cook them on a side w/ the burners off? That will work fine.

    My 12 year old son actually came across this recipe and pointed me to it – he loves bacon and loves BBQ so this is perfect. They look amazing and we’re going to give them a go this weekend. Not sure ours will look quite so good as the pictures though!

      Yep. I’ve never actually tried it myself…but I’ve heard of plenty of people that do.
