Shane’s Rib Shack

Stopped by Shane’s Rib Shack today while visiting family in Jacksonville.  I guess I’ve been living under a rock b/c I had never heard of them before.  Turns out, they’re a massive franchise primarily in the Southeast with stores in 14 states.  Generally speaking, if I stop by a BBQ spot I’ve never tried before, there’s a pretty good chance I’ll try the ribs 🙂   Shane’s serves up St. Louis style ribs and are slathered in what they call their popular “secret sauce”.  I have to give them credit, they were super good.  I ate a full rack in about 5 minutes.  I let the other folks at the table try them too and everyone seemed to agree.  I spoke with one of the cooks and he said they are slow cooked (about 5 hrs) at about 275 degrees in a wood pit using a variety of wood chips.  I’ve eaten my fair share of St. Louis ribs in my day and these were defintely some of the most tender I’ve had.  The picture below is one I took just before I devoured them!
