My buddy Josh just wrapped up his first homemade offset smoker the other day. It’s a 250 gallon sticker burner named “Big Jake”. We were all excited about cooking on it so we threw a big ol’ jam at his house and tested Big Jake out with 3 butts, 1 picnic, 3 racks of spares, 1 whole chicken and some sausage. Big Jake did good his first cook, his temp held really well and he proved to us that he’s excited about being a part of our crew 🙂 Everything turned out super good, especially the spare ribs that I prepared and cooked 🙂 I’ve got a video below of Josh telling us all about Big Jake, but before you check that out, I also wanted to quickly share you how I prepared the spares.
Each rack was rubbed down with a different rub: one with Simply Marvelous Apple, one with Simply Marvelous Sweet Seduction and one with Dizzy Pig Dizzy Dust. I rubbed them down the night before and let them sit in plastic trash bags in the fridge overnight. The next morning, the day of the cook, I took them out about an hour before they’d be introduced to Big Jake and lightly re-coated them w/ the rubs and then hit them pretty hard with brown sugar. Once they were room temp, I took them over to Josh’s and threw them on the cooker. I foiled them about 3 hours in and let them steam for another 2 1/2 – 3 hrs or so. Spares can be really, really good if you cook them right and the general consensus of the crowd was that these were awesome. Hope you enjoy the pics and get out there and cooked some of your own!
