One of my favorite sources recently for highly creative recipes has been from the creative mind of Amy Erickson over at OhBiteIt.com. I tell ya what, that girl keeps cranking out amazingly fun and exciting recipes left and right that are super tasty and usually pretty easy to make. Though I’m typically seeking out recipes I can cook outside on one of my grills, it’s hard not to want to give my kitchen some love and try her recipes out indoors! One of her recent creations that I’ve been wanting to try out for a while now is her Pancake Fried Bacon recipe. Yes, I just said that… 🙂 It’s actually not too terribly bad for you if you just eat a piece or two…..I think… 🙂 OK, that’s enough talking, stop what you’re doing and try this right now! 1-2 packages of thick cut bacon
Pancake mix (with whatever ingredients the box calls for to make the batter like milk, water, eggs, etc…)
Oil (I like to fry with canola oil)
Preheat a fryer, cast iron skillet, etc…with some oil to around 350°. Now, fry the bacon up using your go-to method (I like to fry mine up in a cast iron skillet with a bacon press) then set aside to drain on a paper towel. Next, mix up your pancake batter. At this point, all you have to do is dip the bacon in the pancake batter then fry it up. Make sure to watch it very closely b/c all you’re looking for is a nice golden brown color and it can burn quick if you don’t keep an eye on it. As you’ll see in my video below, mine was done in about 1 1/2 minutes total. Couple pointers: make sure your oil is nice and hot and make sure to follow your pancake batter recipe. If the oil isn’t hot enough or if the batter is too runny it will result in a massive fail 🙁
