Bacon Explosion Fatties!

I didn’t get a chance to do any BBQing this past weekend, so since my buddy Mike and I were planning on a guy’s night on Monday we figured since neither one of us had attempted “Bacon Explosion Fatties” yet, we we might as well try em’ out.  Bacon Explosions, or Fatties, or whatever you want to call them… are basically a roll of ground pork sausage stuffed with whatever you want, then all wrapped up in a bacon-weaved blanket.  They are truly the essence of man.  Be warned though, these will hit your gut hard and I don’t recommended eating them a lot 🙂  All that said, we tried 4 variations which are listed below.

1) Hawaiian – mild sausage, sweet ham, pineapples and cheese
2) Meat and veggie – mild sausage, red and green bell pepper, sweet onion, garlic, pepperoni and cheese
3) Spicy meat and veggie – same as above but with spicy sausage and jalapenos added
4) Spicy mushroom – spicy sausage, mushrooms, jalapenos, sweet onion and garlic

We cooked them on the Weber One Touch Gold kettle for 2 hours at 275.  They probably needed a bit more time, but it was getting late and we were hungry, so we pulled them.  The sausage and bacon were done, there was just some of the shredded sharp cheddar cheese we used that wasn’t completely melted in the middle.  Next time I plan on cooking closer to 2 1/2 – 3 hrs and will probably cook closer to 300.  In the end though, that really didn’t matter at all b/c these beasts were AMAZING!
