My bro Mike gave me permission to post this vinegar sauce recipe of his. We had it on some picnic pulled pork the other night and it was SUPER tasty. Most of the vinegar style sauces I make (and probably most you make as well…) are pretty thin and runny. That’s just the style of most Caroline vinegars. This one however had a little bit of thickness to it (from the honey) which gave it a nice texture. I’m going to make a batch soon and actually put in more honey than this recipe calls for to sweeten and thicken it up even more. If you make some, let me know how it turns out. Mike’s North Carolina Vinegar
1½ cup distilled vinegar
1 teaspoon hot sauce (Louisiana)
½ cup sugar
1 tablespoon kosher salt
2 teaspoons crushed red pepper
2 teaspoons fine ground black pepper
2 heaping tablespoons honey
½ cup ketchup
Add all ingredients to a bowl and whisk until everything has blended well. Pour into a medium sauce pan, bring to a simmer and let simmer for 20-30 minutes. When serving, a little goes a long way with this sauce.
