This past weekend I took my mom’s homemade vanilla ice cream recipe I grew up eating and put a little twist on it. I smoked some candied bacon on my Mini Weber Smokey Mountain then added it to the ice cream. It was absolutely amazing. I took it into work and the reaction I got was kinda funny. Half my coworkers loved it immediately and were begging for seconds, but the other half weren’t quite sure what to think of it. They said the bacon flavor was interesting. Not gross…but simply “interesting”. I for one think it’s really good, but have a couple suggestions for you before you try it for yourself:
- Make sure you get your bacon super crispy if you plan on keeping the bits in the bacon like I show in the video below. Though I smoked the bacon for 2 hrs, it still probably wasn’t quite crisp enough, so in the end product the bacon bits were a bit chewy and that wasn’t really desirable…
- I made a second small batch, but with that one, after I strained the bacon bits out of the mixture before churning the ice cream, I did not add them back in at the end once the ice cream was about done. So…in the video, you see me do that at the end, but I would recommend you just keep them out. The mixture will already be really infused with the bacon flavor after having sat in the mixture for an hour or two in the fridge, so the flavor won’t be an issue. Feel free to try it like I did in the video and add the bits back in, but I personally like the second approach of keeping them out better…
Ice Cream Ingredients
3 cans evaporated milk (usually 12 oz. cans)
3 equivalent portions of whole milk
3 cups sugar
4 very well beaten eggs
1 Tbsp plus 1 tsp vanilla extract
Dash of salt
Candied Bacon Ingredients
1 pack of thick sliced bacon
Pure maple syrup
