E.L.C. – Southwest Pulled Pork Salad with Homemade BBQ Ranch Dressing

This week’s Leftover Mondays features a Southwest-style pulled pork salad with a homemade BBQ ranch dressing.  This was a super easy recipe and the homemade BBQ ranch paired with the pulled pork made this one tasty salad.  Might not have been the “healthiest” salad, but dang it was good!  Recipe, pics and video below.  Enjoy!

Homemade BBQ Ranch Dressing


3/4 cup mayonnaise
1/2 cup butter milk
2 tsp apple cider vinegar
2-3 Tbsp BBQ sauce of your choice
1 tsp BBQ rub of your choice
1/4 tsp dill weed
1/2 tsp minced garlic
1/4 tsp black pepper
1/4 tsp salt
1/2 tsp onion powder
1 Tbsp chopped fresh parsley
1 Tbsp chopped fresh chives

Mix all ingredients in a bowl then transfer to a blending bottle and shake up until smooth.  Put in the fridge to thicken up at least a couple hours before serving.

Pulled Pork Salad


Leftover pulled pork
1 bag of lettuce of your choice (I prefer the “Butter” lettuce)
1 fresh avocado, pitted and cut into chunks
1 cup white or sweet corn
1 cup black beans
Salad toppings of your choice (I like the McCormick salad toppings)
Shredded or crumbled cheese of your choice (optional)
