I thought I’d start a new series here on the blog called “Leftover Mondays”. I’m a family guy, work an 8-5 and am super busy during the week just like a lot of you that read this blog. A lot of times, we’re scrambling during the week to get something thrown together and on the table for a quick meal before the “bed time” routine with our two little ones. Most weekends I’m Q’ing and there are always plenty of leftovers and it’s almost guaranteed on Monday and Tuesday nights that’s what we’re eating. Mondays are a drag too IMO, so having something quick and easy for Monday night dinner is what I’m all about.
From this point forward, any post tagged with “Leftover Mondays” is meant to be a quick picture of what I did w/ some leftovers and a brief description.
First up is Sliced Brisket and Cheddar Sandwiches. All I did was take some leftover brisket that I smoked this weekend, topped with some sautéed onions and then melted some cheese on top. All of this was piled high on some super healthy (j/k…) Texas toast that took 4 min to bake in the over. The sauce I used was some of the Dimples BBQ Sauce I recently reviewed which went well with the brisket. Enjoy!
