“Cinderella Sauce” for Beef Brisket and Beef Short Ribs

I posted a while back about a BBQ book I have called Smoke and Spice.  It’s a great book to have in your library and I often refer to it for new ideas.  A lot of times I like to take a recipe I come across and tweak it out some, but in this case, I came across a BBQ sauce in the book that came out so good there’s no reason to change it.  The authors named it “Cinderella Sauce” and it is meant to pair with beef, specifically beef brisket and beef short ribs.  One batch makes about 2 1/2 cups, but I made a double batch since I had tried it a week before and loved it.  I’d recommend whenever trying out a new sauce to make a small batch (1 cup or so) to see if you like it.  They normally don’t take long to make.  I’ve got the recipe below and also added a picture I took so you can see the reddish/orange color this sauce has.  The specs of white you see are the garlic parts floating around.  This is one of my new favs and will most likely always be in the fridge 🙂

1 1/2 cups ketchup
1 cup beer (i used a light ale)
3/4 cup cider vinegar
1/4 cup cilantro
3 tbsp packed brown sugar
2 tbsp Worcestershire sauce
2 garlic cloves, minced
2 tsp ground cumin
1 1/2 tsp ground anise (this can be hard to find and I didn’t have any for both times i’ve made this sauce…)
1 1/2 tsp salt
1 tsp hot sauce

Mix all ingredients in a saucepan, heat to a strong simmer then lower the heat and let cook for 40-50 minutes until it thickens.
