In the past year or so, bison has become my go-to meat for burgers. Is it my hands-down-favorite meat to use for burgers? No. Nothing will ever take the place of some quality 80/20 ground beef, or if you’re really lucky…Wagyu burgers (100% or blends like Steakhouse Elite). Having said that, the health benefits of bison compared to beef, as well as the nice flavor profile (it is NOT gamey…), make bison my preferred meat for 80% of the burgers I grill up these days.
The recipe video below features ground bison and wild boar bacon from Frontier Meats. I cooked these burgers up on my REC TEC pellet grill using the GrillGrate insert. The flavor of the grilled boar bacon with the bison is amazing enough…but top these with some gouda cheese and smoky mayo and they become next level!
Smoky Mayo (courtesy of Weber’s Big Book of Burgers)
1/2 cup mayonnaise
1 small canned chipotle chile peppers in adobe sauce
1/4 tsp paprika
1/4 tsp kosher salt
Add all ingredients to a food processor or blender (I used my handy Ninja Pro blender) and blend until creamy smooth. Set in the fridge until it’s time to top the burgers. Enjoy!
