I’m a BIG fan of the awesome Dizzy Pig rubs and the other day I got to test out the “Shakin’ the Tree” rub. Though Dizzy Pig has a rub called “Raging River” which was developed for salmon (which I’ve had…and it’s awesome!), I tested the Shakin’ the Tree out on a nice piece of salmon and it came out amazing. I wanted to experience the full flavor of the rub, so though I normally glaze salmon with a maple glaze, I opted to prepare the salmon with just the rub and nothing else.
Once the top is popped off, one quick smell and you’ll immediately pick up both citrus and pepper notes followed by a little bit of garlic, onion and coriander. I also really like how Dizzy Pig uses turbinado sugar in several of their rubs, including this one. The flavor of this rub is a peppery citrus start with a sweet finish. Though I’ve only had it on salmon so far, I’m willing to bet it’s going to be awesome with pretty much any seafood you can throw at it. It will also be great on poultry and pork.
One thing to note about Dizzy Pig rubs is that they are all-natural, gluten-free and contain no MSG. They take pride on the freshness of their ingredients and it really comes through in their rubs. I’ve tried at least a sample of most of their rubs and have yet to be disappointed.
