Bacon Wrapped Country Style Pork Ribs

I was at a party last night and a friend of mine had cooked some bacon wrapped country style pork ribs.  He’s cooked them several times and I always say to myself “I need to make these!!”…but just never get around to it.  Welp…I finally gave them a shot yesterday and they didn’t disappoint 🙂

The process is insanely easy and yields some melt-in-your-mouth goodness.  This is a great recipe for a crowd because it’s relatively cheap (especially if you can find a sale on bacon), the bacon wrapped ribs are filling…and of course the most important aspect….they taste AMAZING!  (especially with a mustard-based BBQ sauce IMO…)

I cooked these on my Pit Barrel Cooker which is a vertical drum-style charcoal smoker that has gained a HUGE following in the past couple of years.  If you’d like, I have an entire playlist dedicated to my cooks on the PBC on my YouTube channel if you want to check it out.

First step is rubbing down the country style ribs with your favorite BBQ rub.  I used the Simply Marvelous Sweet Seduction rub.  Though this rub excels with poultry, it works amazingly well with pork too.

Next, wrap the rubbed down ribs in bacon.  It will mostly likely take two strips per rib.

Once wrapped in bacon, sprinkle with a little bit more of the rub.

At this point, I put them on the PBC rack and smoke them for about 2 hrs.  The PBC typically runs between 275° – 310°, depending on altitude of where you live.

This is at the 2 hr mark. This is what you’re looking for.  The bacon is nice and crisp.

At this point, place them in a foil pan and cover with foil.  Place back in the PBC for another couple of hours.

These will literally be melt-in-your mouth tender at this point.  Plate and serve!

    These look fantastic, dude! I have to put this on my try this list. I want to use it with Benton’s bacon because it is so thick it will hold up to the longer cook.
