Here’s a staple meal to make your lady super happy and most likely give you extra special lovin’ at the end of the night. I’ve done this dish a few different ways, but this latest version is by far my favorite. I’ve got pics and recipes below. This time around I rubbed down a couple pork tenderloins in the Simply Marvelous “Sweet Seduction” rub. If you haven’t tried any of the Simply Marvelous rubs, stop what your doing and order some NOW. If you don’t like them, something is wrong with you. The tenderloins sat in the fridge for 1/2 a day to get nice and saturated with the goodness. A few hours before I prepped the veggie skewers I went ahead and made the apricot glaze and set it aside. Once it was prepping time, I cut up green bell peppers, red bell peppers and onions and used all of those with some grape tomatoes to make a bunch of veggie skewers. I fire up a load of charcoal in my Weber chimney starter and once that was ready dumped them into my 26.75″ Weber One Touch Gold kettle. I threw the tenderloin and the veggie skewers on and watched the temp of the tenderloin from inside the house with a wireless meat therm. Pulled the tenderloin off around 140° – 145°. Sliced then drizzled the magical apricot glaze over the pork and then served with the balsamic glazed veggie skewers. It was amazing.
1/2 cup apricot jam (you can use preserves, but it will be chunkier)
1/4 cup apple cider vinegar
1/2 cup ketchup
1/4 cup vegetable oil
2 tbsp brown sugar
1/2 tsp oregano
1/2 tsp Worcestershire sauce
1 tsp salt
1-2 tsp cayenne (you don’t have to use this, but I do to counter the sweetness of this sauce)
Stir all the ingredients in a small sauce pan, bring to boil for 1 minute then simmer for 10-15 minutes. Serve warm.
Balsamic Soy Glaze
1/2 cup balsamic vinegar
1/2 cup soy sauce
1/4 cup honey
Combine all ingredients in a small sauce pan over medium high heat and reduce to about half. Pour over grilled veggies, toss so the veggies are completely covered with the glaze and then serve.
