My wife made some epic Andes Mint Cookies the other day that were all kinds of good. These took less than 5 minutes to prep and about 5 minutes to bake. If you take these out with a small crowd around, prepare for them to be gone in matter of seconds 🙂
1 box Devil’s Food Cake Mix
1/3 cup vegetable oil
1 box Andes Mints
Preheat oven to 350°. Mix together the cake mix, egg and vegetable oil. Form 1″ sized balls and place on a greased cookie sheet. Bake for about 5 minutes making sure to not over cook. Take the cookies out and let cool for 1 minute then place 1 Andes Mint on top of each cookie. Let the Andes Mint sit for about 5 more minutes to get soft and then swirl with a spoon and let continue to cool. Pics and video below. Enjoy!
